
This is a Happy Hedgehog Foods own take on a popular British favourite. Serves 2.
What you’ll need:
- 2 large baked potatoes
- Tin of canned tuna (drained)
- 50ml Happy Hedgehog Foods mango vinegar
- Knob of butter (optional)
- Handful of lettuce leaves
- One cup of cucumber finely chopped
- One cup of salad tomato’s chopped
- One cup of mixed peppers chopped
- Half a cup of spring onion or equivalent
- Half a Granny Smith apple finely chopped.
How to make:
- In a bowl mix all the salad ingredients together, lightly toss until well mixed.
- In a small bowl add the drained tuna and add the mango vinegar, mix together.
- Cut the hot baked potatoes in half and lightly fluff the insides with a fork, add the butter.
- As the butter begins to melt add the mixed tuna.
- Serve with the salad mix.
- You can add extra mango vinegar to the salad if you wish.
- Serve immediately
