Super sandwich that takes less than 3 mins to prepare and tastes delicious!
What you’ll need:
- 2x slices of Olive bread
- 1 tbls x mascarpone cheese
- 1x 50g fresh Raspberries
- 1x 50g fresh sliced plums
- 100ml Happy Hedgehog Foods Raspberry Balsamic
- A handful of wild rocket
How to make:
- Lightly toast the Olive bread pieces, so they are not too olive wet and spread thickly with the mascarpone cheese
- In a frying pan add the vinegar and the fruit
- Cook lightly until the fruit is warmed through and slightly softened.
- Pour over the prepared breads and top with wild rocket
- Serve immediately.
