HISTORICAL FACT: This recipe is over 190 years old and has taken over 3 years to perfect.
Before the days of refrigeration, meats and other foods would often go off quickly. Ketchups and sauces using spirit such as Brandy, Gin, and whisky were created in order to mask the rancid flavours of food that was starting to spoil. When the temperance movement appeared around the 1890’s, the alcohol was removed as was the bacon, as it went as rancid as the food they were trying to make taste better. Hence as to one of the reasons why we have breakfast brown sauce as it is today
