What you’ll need:
2x pieces of sourdough bread
1x 100g of either Stilton or Shropshire blue cheese
(If you are not a lover of blue cheese, a rich mature cheese does nicely)
1x Punnet Fresh strawberries (hulled and lightly chopped)
1x Spring onions chopped half a cup
1x Happy Hedgehog Strawberry Balsamic
How to make:
- In a frying pan add about 40ml of the balsamic and add the onions and strawberries.
- Lightly pan fry until the fruits begin to soften, but don’t lose their shape.
- Lightly toast the sourdough, lightly drizzle a little balsamic across, and place a layer of cheese through.
- Gently pour the cooked strawberries across the bread, allowing the hot juice to melt the cheese slightly.
- Lightly drizzle with a little extra balsamic
- Serve straight away
